Panevino, Las Vegas, Nevada

While Hayden’s parents were visiting us in Las Vegas, we went to Panevino for the first time, which is located South of the strip, near the airport. It’s a bit more of an upscale restaurant so you’ll want to get dressed up before heading there, but the food and service are definitely worth it. It’s also a bit on the pricier side, but if you’re looking for a great Italian restaurant that isn’t in a casino, definitely check out Panevino!

What we ordered

Eggplant (& Mozzarella) Bruschettone- Toasted ciabatta bread, grilled eggplant, melted fresh mozzarella (order without), oven roasted tomatoes, oregano and fresh basil. We ordered the bruschetta without the mozzarella and it was really great. The eggplant gave the dish more substance than traditional bruschetta which just has tomatoes. It was a great start to the meal.

Caesar Salad- Hearts of romaine in a Caesar dressing with homemade “parmesan cheese”, diced tomatoes and focaccia croutons (oil-free dressing). Anytime we can find a vegan Caesar salad, we tend to order it because more often than not, the dressing turns out to be amazing. That same streak continued here as the dressing, combined with the homemade vegan parmesan really brought out some incredible flavors in the salad.

Grilled Iceberg & Vegetable Salad- Grilled asparagus, artichoke hearts, eggplant, roasted tomatoes, corn and bell peppers on a bed of grilled iceberg lettuce drizzled with ranch dressing (oil-free). Iceberg lettuce is one of those foods that it’s almost better to just throw it to the side than to try and eat it as there’s really no nutritional value. However, when it has been grilled and is brought more to the forefront of the dish, it can be quite surprising as was the case here with this salad. By grilling the lettuce, it allowed it to take on its own flavor that complemented the rest of the dish nicely as opposed to feeling like fluff.

Organic Pesto & Mushroom Risotto- Organic brown rice risotto with assorted Italian mushrooms, pesto, mashed avocado and diced tomatoes (low-oil). Aaron has been dying for a good vegan risotto and this one lived up to his expectations. The rice was cooked perfectly and the creaminess of the pesto made the dish absolutely incredible.

Vincenzo’s Organic “Ricotta” & Spinach Ravioli- Homemade spinach ravioli filled with organic “Ricotta” and ground walnuts, in a creamy vodka-tomato sauce (oil-free). It didn’t look like a lot of food, just a handful of ravioli’s, but they were VERY good. They had great texture and the vodka sauce was absolutely delicious.

Vincenzo’s Decadent Chocolate Pudding- Fat-free cocoa creamy chocolate pudding with fresh strawberries. By the end of the night, we had eaten enough to the point that we didn’t need dessert, but we had to get our hands on the chocolate pudding. While not the best dish we had that night, it definitely was worth the order as the pudding came out smooth and decadent, much like the name!
